Mary Ann's Cheese Straws
My friend and long-time student, Mary Ann Horton, gifted me with this recipe. The first time I tasted these cheese straws at her home, she served them in a tall cylindrical cup. I consumed the entire serving alone! Thanks, Mary Ann
This would nice as a hostess present in a pretty jar with a bow.
Ingredients:
1 cup sharp cheddar cheese, grated
1 cup unbleached all-purpose flour1 tsp dry mustard
1/4 tsp smoked paprika, La Chinata (available at Gourmet Warehouse)
1 tbsp butter, melted
1/3 cup milk
to taste sea salt
to taste ground tellicherry or black pepper
Method:
Blend the cheese, flour, dry mustard, smoked paprika, melted butter and milk into a soft dough. Form into a flat disk and refrigerate for about 30 minutes to firm up.Roll out onto a floured board approximately 1/2 inch thick. With a sharp knife or pizza cutter, cut 1/4 x 8 inch strips.
Sprinkle with sea salt and ground tellicherry pepper. Twist the strips and place on a baking sheet. Bake at 450 for approximately 5 minutes. They should be golden. Do not remove from pan until completely cool.
Makes about 24 straws.
