Mojito

This Cuban classic that hails back to the 30's and 40's, garnered fame from celebrities like Hemmingway, Errol Flynn and Nat King Cole. The Mojito originated as a working class drink in Cuba but soon found glamour in the hands of the very well heeled. It's emergence today indicates that perfectly paired flavours never really go out of style

  • 12 medium fresh mint leaves (unblemished)
  • 5 teaspoons berry sugar
  • ¼ cup fresh squeezed lime juice
  • ¾ cup rum
  • 8 ounces soda water
  • ice

Place 8 larger mint leaves in the bottom of a pitcher, crush them with a muddler
(a long handled tool that has bumps on the end) or use the back of a large spoon.

Add the sugar, lime juice and rum. Mix together. Pour the soda over. Pour into iced glasses and garnish each with the remaining mint sprig.

Serves 4
