Peach Bellini
Fresh B.C Peaches are best enjoyed fresh. Sliced for breakfast, chopped into a fruit salad or dressed into a spicy salsa for grilled chicken and fish. Once they become a bit on the soft side and not able to be sliced they can be pureed to champion the summer cocktail scene.
Ingredients:
1 ripe B.C. peach, peeled and pitted and pureed
1 tablespoon Amaretto (almond liquor)
1 split Champagne
1 tablespoon Amaretto (almond liquor)
1 split Champagne
Method:
Puree the peaches in a food processor, add the Amaretto and blend.
Spoon the pureed peach mixture into chilled Champagne flutes and pour the Champagne over top.
Spoon the pureed peach mixture into chilled Champagne flutes and pour the Champagne over top.
