Fruit, Rice & Nut Stuffing
An alternative to meat stuffing, this is a perfect combination for turkey, chicken or pheasant.
4 Tbsp. unsalted butter
1 onion, diced
6 large dried figs (chopped & soaked in hot water)
1 cup cooked white rice
1 cup fresh breadcrumbs, fine
10 dried apricots, chopped
3 Tbsp fresh thyme, stem removed
2 Teaspoons fresh lemon zest
½ cup fresh chopped parsley
2/3 cup unsalted pistachio nutschicken or vegetable stock as needed
Heat the butter in a medium saucepan, add the onion and sauté until soft but not brown. Transfer to a large bowl. Drain the figs and discard the water.Add the figs, rice, breadcrumbs, apricots, thyme, zest, parsley and nuts to the bowl. Mix well to combine. The stuffing should hold together when you squeeze it. If not, add the stock a tablespoon at a time until the stuffing holds together when you squeeze.
