Lamb Burgers
Ingredients:
burger buns
550 grams lean ground lamb
2 Tbsp chopped preserved lemon
2 garlic cloves, minced
2 shallots, finely chopped
1/3 cup toasted pine nuts
½ teas. sea salt
½ teas. ground cinnamon
½ teas. ground cardamom
1 large egg, lightly beaten
½ cup panko (Japanese bread crumbs)
½ cup chopped fresh cilantro
1 cup garlic onion jam
1 heaping cup fresh arugula leaves or watercress
one – 14 ounce jar fire roasted red peppers, blotted dryl
Method:
Mix the ground lamb with the lemon, garlic, shallot, pine nuts, sea salt, cinnamon, cardamom, egg, panko, jalapeno and cilantro.
Form into 2 inch patties and pan fry or BBQ on both sides until cooked through.
Toast the hamburger buns until lightly golden brown, spread both sides with a smear of garlic jam, then top with the lamb patty, a handful of the cress or arugula, and a strip of red pepper.
Sandwich it together and skewer with a decorative pick and olive.
Serve warm
