Decadent French Toast


Few holidays in our calendar year lay claim to real celebration, or at least those that bring together festivities of food, family and gathering around a common love, eating. Easter is indeed one of those traditional celebrations that bring many families together, regardless of religion, in a bond that makes for lasting memories. Some better that others, but memories none-the-less. Here are 2 very different brunch recipes that will surely bring smiles to even the most difficult of family members.

Ingredients:
12 slices day old raisin bread or challah
6 large eggs
3 tbsp. light cream
1/2 tsp. ground cinnamon
pinch sea salt
1 cup soft Philly cream cheese
butter or grapeseed oil for frying
Real maple syrup
Marionberry or bumbleberry syrup
Icing sugar for garnish

Method:
1. Slice the bread into 1/2 inch slices, spread a layer of cream cheese in the center of the bread. Sandwich the slices together forming 6 servings. Set aside.
2. In a flat sided dish lightly whisk the eggs, add the cream, cinnamon and salt.
3. Heat a large non-stick skillet to medium heat, add a kiss of oil or butter to lightly coat the pan. Dip the bread sandwiches into the egg mixture, letting it soak up a portion of the egg. Lift the bread out of the egg, letting the excess drip off. Pan fry the sandwiches in the preheated pan until golden on both sides.
4. Transfer to your serving plate, dust with icing sugar and serve with real Canadian maple syrup or a wonderful Saskatoon marionberry or bumbleberry syrup. Viva Canada!
