Herbed Parmesan Muffins


These exceptionally easy muffins marry well with a bowl of soup or in the bread basket for those lazy Sunday morning brunches. Either way, give them a try.

Ingredients: 1 1/2 cups buttermilk
2 large eggs
3 tbsp. olive oil
2 1/2 cups unbleached all purpose flour
1/2 cup fresh grated Parmesan cheese
2 tsp. baking powder
1 tsp. baking soda
pinch of sea salt
1 cup cubed Swiss cheese
3 tbsp. fresh herbs, chopped, basil, oregano, dill
1/3 cup additional Parmesan cheese for topping

Method:
1. Whisk together the buttermilk, eggs and oil. In another bowl, sift together the dry ingredients, Parmesan cheese, Swiss cubes and fresh herbs.
2. Combine the wet and dry ingredients together, the batter will be slightly lumpy. Spoon into greased muffin pans, sprinkle the tops with the additional Parmesan and bake in a preheated 350F degree oven for 20 minutes.
