Smoked Salmon Pinwheels


An easy appetizer that can be made in minutes. If goat cheese is not your favourite, use cream cheese for a simple alternative. for a vegetarian version, roasted vegetables can be substituted for the salmon. I often use the coloured flour tortillas that are readily available in supermarkets.

Ingredients:
2 tbsp. olive oil
3 large shallots
1 lb. goat cheese
1 tbsp. horseradish
10 flour tortillas, 8-inch
1 sliced smoked salmon
Freshly cracked pepper to taste.
1 bunch fresh dill

Method:
1. Heat the olive oil in a small part Add the shallots and fry until crispy. Drain on paper towel. Combine the goat cheese with the horseradish and shallots.
2. Lay the tortillas flat on your work surface and spread the cheese mixture evenly over them. Generously grind pepper over the cheese. Place the smoked salmon on top of the cheese in a single, even layer. Place some dill in the center of each tortilla, forming a line down the center.
3. Firmly roll the tortilla up, jelly-roll fashion. Make sure it is tight so it will not come apart when slicing. Wrap each roll tightly in plastic wrap and chill until serving time.
4. To serve, slice on the diagonal into 1/2 inch slices.
