Every Mother is a Star Cookies

No matter what your age, ethnic origin, or sex gender, we all love cookies. These cookies were developed to create magic as well as flavour. If anyone deserves a bit of magic, mothers do. For the loving, caring mothers who have baked, cleaned and cooked for us over the years, here is a treat for you.

Ingredients:
1 cup unsalted butter
1/2 cup icing sugar
1 1/2 cup unbleached flour
pinch of sea salt
1/2 cup dark Dutch cocoa powder

Method:
Preheat the oven to 325. In a large bowl cream the butter and sugar together. Add the flour, sea salt and cocoa powder, mixing until the dough is smooth and even in color.
2. Wrap the dough in plastic wrap and chill for about 20 minutes. Roll the dough to about 1/4 inch thickness. Using a star cookie cutter cut the shapes out of the dough.
3. Place the stars on a parchment lined cookie sheet and chill for 15 minutes before baking.
4. Bake for 15 to 20 minutes. Cool.

Filling:
2 tbsp. unsalted butter
4 ounces cream cheese or mascarpone
1 cup icing sugar
1 tsp. pure vanilla or almond extract
gold dust for garnish
silver dust for garnish

Method:
1. Beat the butter and cheese together, add the sugar and vanilla. The icing should be thick.
2. Spread a portion of the icing onto one side of the star. Gently press another star on top. Be careful not to have the icing ooze over the edges.
3. Carefully dip you finger into the gold and or silver dust and rub over the top of the star cookie.

Makes 4 dozen sandwiched 1 1/2 inch cookies.
