Jose's Herbed Olives
Ingredients:
2 - 3 garlic cloves, chopped
1/2 fresh lemon, sliced
1 tbsp. hot chili flakes (optional)
1 tbsp. fresh cracked pepper
2 or 3 sprigs fresh rosemary, bruised
2 or 3 sprigs fresh oregano & thyme bruised
1 cup Nicoise olives
1 cup kalamata olive
1 cup sun dried olives
1 cup large green picholine olives
3/4 cup extra virgin olive oil
Method:
1. In a large bowl, mix together the garlic, lemon slices, chili flakes, cracked pepper and herbs.
2. Add the olives, stirring well to combine.
3. Place in a decorative bowl for serving. For storing, place in glass jars with the spring lid, or canning jars. Refrigerate until ready to use. They make great hostess gifts.
