Wendy's Spicy Nuts
Without a doubt, the tastiest, most flavourful, robust, gotta-eat-more nuts that will ever pass your lips! My friend, Wendy Yackimec has, over the years, perfected a mixture of nuts and spice, She has coddled, roasted and somewhat coaxed this mixture of assorted nuts into being the perfect cocktail snack. Thanks, Wendy.Ingredients
1 1/2 lb mixed unsalted nuts, such as cashews, almonds, Brazil nuts, pecans, hazelnuts, pistachios and peanuts
6 tbsp quality soy sauce
2 1/2 tbsp grapeseed or peanut oil
4 1/2 tbsp chili oil
1 1/2 tsp fleur de sel or coarse sea salt
Method
Preheat oven to 350F. Place the nuts in a large bowl and set aside. In a small bowl, mix together the soy sauce, oil, chili oil and salt. Pour this mixture over the nuts and mix well to coat evenly with the seasoning.
Transfer to a large roasting pan and bake in the preheated oven for about 20 minutes or until the nuts are crispy. It is important to stir the nuts every 5-6 minutes to ensure even roasting.
