Tortellini & Chorizo Soup
A very easy, tasty soup to prepare just as your trick or treaters are rushing out the door.
2 tbsp. olive oil
1 large yellow onion, diced
1 clove garlic, minced
1 pound chorizo or other firm sausage, sliced 1/2 inch thick
6 cups chicken stock
1 - 12 oz. package cheese tortellini
1 bunch fresh spinach, washed, stemmed and chopped
Sea salt to taste
coarsely ground pepper
fresh grated Parmesan cheese for garnish
1. Heat the olive oil in a heavy skillet. When hot, add the onion and sautÃ© for about 3 minutes. Add the garlic and chorizo and continue to sautÃ© until the chorizo is browned on both sides. About 8 more minutes.
2. Heat the stock in a soup pot, add the tortellini and cook for about 10 minutes. Stir in the spinach, along with the chorizo/onion mixture. Reduce the heat and simmer for about 15 minutes or until the tortellini is cooked through.
3. Taste and adjust the seasoning with the salt and pepper. Ladle into bowls and pass the Parmesan at the table.
