Honey Drenched Fruit Rolls
8 dried apricot halves
10 dried black mission figs
1/2 cup dried cranberries
10 dates, pitted
1 cup almonds, toasted
˝ cup pomegranate juice
˝ teaspoon cinnamon
1 teaspoon ground cardamom
1/2 cup fresh orange juice
1 cup honey
one 4 inch cinnamon stick
1 package filo pastry
melted butter for brushing filo
Place the apricots, figs, cranberries and dates in a large
bowl. Cover with hot water and let them re hydrate for at
least 30 minutes. Drain well.
Place the orange juice, honey and cinnamon stick
in a small saucepan and bring to a boil, turn down to simmer and cook for about 5 minutes, it will be slightly syrupy.
Transfer the drained fruits to the bowl of a food processor,
add the almonds, pomegranate juice, cinnamon and cardamom.
