One of my favourite quick fixes for a snack or easy appy is quesadillas. The fillings can be whatever you have in the refrigerator - leftover cooked chicken, a handful of shrimp and so on. The more little bits of different cheeses you have the better. I usually grate them all together for a unique flavour.
1 package 8 inch flour tortillas
fresh papaya, mango or avocado
cooked black beans
pickled or fresh jalapenos
2 cups grated jack, mozzarella, asiago, provolone, or your choice
1. Lay the flour tortillas on your work surface, spread evenly with the grated cheese.
2. Top with a variety of topping that you like. Place a tortilla on top and press lightly to adhere.
3. Place the quesadilla in a non-stick pan and cook on both sides until golden brown, about 2 minutes for each side.
4. Cut into wedges and serve with your favourite salsa.
