TROPICAL FRUIT SALSA
Whenever you see the little mini bananas at your market, let them be the inspiration for this salsa. A huge burst of fruit with complex flavours that will compliment anything you serve with it. Perfect for chicken, fish, pork or simply as a stand alone with corn chips. If the bananas are not available increase the avocadoes to 3.
Ingredients:
3 mini bananas, peeled & diced
1 ripe but firm peeled & diced avocado
1 mango, peeled & dice
1 basket grape tomatoes, halved
2 large shallots, finely diced
1 large garlic clove, minced
1 Tbsp. finely chopped ginger
1 tablespoon Tabasco sauce
several dashes of hot sauce (optional)
juice of 1 large lime
sea salt to taste
fresh ground pepper to taste
Method:
Dice the fruit into a uniform size, place in a large bowl. Mix the seasonings (shallot, garlic, ginger, Tabasco, hot sauce lime juice, sea salt & pepper) together. Stir together the seasonings and pour over the fruit, toss lightly to combine, taking care not to over mix and mush the fruit.
Chill until serving. Serves 6-8
