Chicken Salad Chinoise

Ingredients:
1/3 cup orange juice
1/4 cup peanut butter
1 tbsp. soy sauce
1 tbsp. hoisin
1/2 tsp. minced ginger
1 small clove garlic, minced
1/4 cup coriander
3 cups cooked chicken meat
1 cup diced cucumber
1 tomato chopped
1/2 cup bean sprouts (optional)

Method:
1. Stir orange juice, peanut butter, soy sauce, hoisin, ginger and garlic until smooth. Stir in coriander leaves.
2. Mix chicken, cucumber, tomato and bean sprouts ( if using) in a large bowl. Stir in the orange juice dressing until everything is evenly coated.

Serves 4.
